The Place

Rowhill Grange Hotel & Utopia Spa are part of a luxury private group of hotels called Alexander Hotels located just outside London in Kent.

Award winning Spa, 38 bedroom hotel & offering guests a choice of Brasserie and Fine Dining Restaurant serving 3 rosette standard food. In addition there is a self contained banqueting suite and a separate Conference venue all within 15 acres of beautiful gardens.

The Role - Chef de Partie (veg) and Demi Chef de Partie (Pastry)

Reporting to the Head Chef/Sous Chef you will be leading a section of the kitchen with the support of a Demi Chef de Partie / Commis Chef. The kitchen brigade is made up of 12 chefs and 4 kitchen porters.

You will be responsible for;

  • Ordering and stock control
  • Designing with the Executive Chef menu items for afternoon tea, restaurant as well as banqueting menus
  • Produce plated food for the two restaurants and assisting with preparation for the conference and banqueting suites
  • Supervision of Demi Chef de Partie / Commis Chef to achieve consistent standards

The business is varied offering catering for Spa Guests, Leisure clients, Local guests as well as corporate, conference and banqueting function guests. The Hotel is a popular wedding venue with weddings taking place in the Wedding Venue located in the grounds.

The following information will give you an indication of the business levels and variety of menus offered;

Restaurant 350-450 covers per week

Afternoon Tea 700 covers per week

Banqueting 120 covers maximum

Weddings 90-100 weddings per year

Brasserie Informal drinks/dining area for 30 covers which forms part of the Cocktail Bar

Requirements

The ideal candidate would be someone who has worked in a quality environment using fresh products and ingredients and able to take control of a section of the kitchen

Demonstrate during a trial shift the practical ability to be able to produce plated dishes to 2 Rosette standard

Demonstrate flair and creativity to build on the successful restaurant menu

Hold the experience to manage the multi menu requirements and busy banqueting operation
